Breakfast Mexican Flatbreads *recipe*

I’m all about easy meals and versatility - and this is a great variation of my go-to recipe ‘Black Bean Chilli Flatbreads’ linked here. Either batch cook (double the ingredients) and have for breakfast / brunch the next day; or make it for brunch and keep extras for a quick meal the following day.

For the breakfast option simply follow the black bean chill recipe, and swap the yogurt out for a poached egg, and red pepper for 1/2 an avocado. Top with coriander, or parsley of you prefer.
