Goats Cheese, Beetroot and Lentil Salad *recipe*
This hearty salad is all about simplicity and nourishment. It takes a few minutes to make and is nutrient dense:
Lentils are a source of soluble fibre to support gut health and lower cholesterol
Beetroot also contains betalains which reduce oxidative stress, and help prevent to DNA damage. They are also rich in nitrate which can help lower blood pressure.
Parsley is a great digestive aid - it helps to stimulate production of bile and gastric juices to help with the break down, absorption and assimilation of food
Extra virgin olive oil is packed with antioxidants and helps to support blood sugar balance
