Goats Cheese, Beetroot and Lentil Salad *recipe*

This hearty salad is all about simplicity and nourishment. It takes a few minutes to make and is nutrient dense:

  • Lentils are a source of soluble fibre to support gut health and lower cholesterol 

  • Beetroot also contains betalains which reduce oxidative stress, and help prevent to DNA damage. They are also rich in nitrate which can help lower blood pressure. 

  • Parsley is a great digestive aid - it helps to stimulate production of bile and gastric juices to help with the break down, absorption and assimilation of food

  • Extra virgin olive oil is packed with antioxidants and helps to support blood sugar balance

What you need

1 x tin of Bijoux Verts® Lentils - I use Epicure (available in Waitrose)

1 x large cooked beet root, sliced

1 x palm size of goats cheese, sliced / crumbled

1 bunch of fresh parsley, finely chopped

Squeeze of fresh lemon

Drizzle of extra virgin olive oil

Season with sea salt and ground black pepper

Drain and rinse the lentils and add to a plate. Then layer with the beetroot and goats cheese. Sprinkle with parsley and finished with a drizzle of the olive oil and squeeze of lemon juice.
