Homemade Baked Beans *recipe*
Baked beans on toast…the ultimate comfort food, right?! No Heinz needed here - they are so easy to create at home, see recipe below. Such a quick meal, plus the organic ingredients offer added benefits - see ‘Tips’ below:
What you need (serves 2):
1 x tin of organic haricot beans (I use Epicure)
1 x tbsp of organic tomato purée
Sea salt and ground black pepper
1/2 tsp of paprika
Big splash of balsamic vinegar
1 x clove of garlic
2 slices of sourdough bread
Organic butter
How to make it:
Finely chop / crush the clove of garlic - leave it to sit for 10 minutes
Drain the can of haricot beans and then add to a pan
Add a splash of filtered water and the tomato purée
Place on a medium to high heat and add the paprika, salt, pepper and balsamic vinegar
Stir and leave it to heat, until it starts to bubble, then lower the heat
Keep stiring until the tomato sauce starts to thicken, then add the garlic and lower the heat
Leave for a few minutes, then remove from the heat before it starts to catch
Toast the sourdough bread and then butter and serve the beans on top
(you can store the cooked baked beans in a sealed container in the fridge for 3 days)
Tips
Tomato purée
- I always recommend going organic when buying tomatoes, as non-organic tomatoes are so heavily sprayed with pesticides
- also tomato purée is great to use instead of tinned tomatoes as it has a more intense flavour so you use far less (and can always add water to make more of a sauce) - so even though it is more expensive, it will go further :)
Garlic
- Always finely chop / crush and leave for 10-15 minutes before adding to heat for increased health benefits
- is a prebiotic which supports the gut microbiome
- supports liver health
