Variety is key
Getting a variety of vegetables (and fruit) on your plate at each meal has a ton of benefits:
🥬 Each plant has a unique nutrient profile i.e. different vitamins, minerals and antioxidants. Therefore the more variety of plants on your plate, the greater the
nutritional density of your meal
🥬 Eating lots of different plants means a higher diversity of fibre and prebiotics, which feed your gut bugs and supports your microbiome. This promotes gut health, supports the immune system and helps to balance hormones
🥬 Fruit and vegetables have a high water content and therefore aid hydration, which is just as important in winter (as summer) due to central heating etc
🥬 Greater variety adds more texture and flavour to your meal, which means a tastier and more satisfying feeling when eating it and increased satiety 😋 (so less likelihood of overeating or need for snacking between meals)
Also as a tip - using a high quality extra virgin olive oil (packed with polyphenols) to drizzle over your salad or vegetables aids the absorption of fat soluble vitamins A, E and K
So go wild, be creative and get as many colourful plants on your plate as you can 🌈
