Delish Granola *simple recipe*

Often shop bought granolas are full of sugar and seem excessively expensive. I’m not a huge fan of cereals generally, but occasionally I crave homemade granola... here’s my quick and simple recipe:

What you’ll need:

2 tbsp organic butter or coconut oil

1 tbsp organic maple syrup

300g organic oats

1 tbsp linseeds (flaxseeds)

1 tbsp pumpkin seeds

1 tsp cinnamon

Sprinkle of nutmeg

1 tbsp raisins (added at end)

1 tbsp of any other nuts of your choice - chopped cashews, walnuts, pecans, hazelnuts

How to make it:

Preheat oven to 170 degrees celsius and line a baking tray with baking paper

Melt butter / coconut oil in a pan - take off the heat then add the oats, maple syrup, cinnamon, nutmeg, linseeds and mix until coated. Adjust any of the ingredient measures to suit your preferences (i.e. take out nutmeg if you’re not a fan, or add more maple syrup if you like it a little sweeter).

Spread out the mixture on the baking paper and place in the oven for around 20-25 mins or until golden. Open occasionally to mix the oats around so they don’t catch.

Meanwhile chop any additional nuts you are adding to the granola.

Once the oats are golden remove from the oven and leave to cool. Once cooled, spoon into a storage jar, add the nuts and raisins, and shake until the are evenly mixed.

And serve:

Enjoy at your leisure with any milk of choice, natural organic yoghurt (@yeovalley have a great natural one with probiotics), as a topping to stewed fruit or even to add a little more oomph to a homemade crumble 😋
