Sausage, Lentil and Leek Winter Casserole *prebiotic-rich recipe*

This hearty casserole is perfect for wintery days - it’s also prebiotic-rich (packed with lentils and leeks) to support the gut-microbiome and has a lovely sweetness from the prunes. Great to just be eaten on its own; or served with greens or rice. Give it a try!

Ingredients

  • 4 x Good quality chipolata sausages chopped (or another protein / meat of your choice)

  • Pinch of mixed herbs, cayenne pepper and turmeric

  • 1 Bay leaf

  • Salt and pepper

  • 1 Stock cube

  • A generous splash of red wine vinegar

  • 3 x Cloves of garlic, finely chopped

  • 1 x Leek, thinly sliced

  • 1 x Small handful of dried pitted prunes, finely chopped

  • 1 x Tin of organic black / puy lentils in water

You’ll also need a pan / cooking pot with a lid

Method

  • Place the pan on a high heat and add the sausages, mixed herbs, cayenne pepper, turmeric, bay leaf, salt, black pepper, stock cube and red wine vinegar

  • Reduce to a medium heat and stir

  • Place the lid on the pan to steam for 5 minutes

  • Remove the lid and let the ingredients catch a bit on the bottom of pan

  • Then add the chopped garlic, leek, prunes and tin of lentils (with their water)

  • Give it a good stir, then place the lid back on

  • Let it cook on medium heat for 15 mins or until thick and stew-like
