Veggie lentil cottage pie *recipe*

This dish is a great way to pack lots of veggies into one meal, use up veg and batch cook so you have portions left over for the next day / later on the week.

Ingredients
- 3 cloves of garlic
- 1 red onion
- 6 mushrooms
- 2 medium carrots
- 1 green pepper
- 2 sprigs of fresh rosemary (or use 1/2 tsp of dried rosemary)

Chop the above and sauté until soft

Then add -
- 1 tin of lentils
- Splash of balsamic vinegar
- 1/2 tube tomato purée
- 1 stock cube
- Pinch of sea salt and black pepper
- Splash of filtered water

Mix together with veg and leave to cook on a medium heat for a further 20 mins

Top with mash
- 7 medium potatoes (peel and boil until soft)
- Generous amount of butter
- Splash of organic whole milk
- 1/2 tsp English mustard
- Pinch of sea salt and black pepper

Place under the grill for 15 mins or until slightly golden.
