Winter Warming Chickpea Masala *recipe*
Quick. Simple. Delicious
What you need for it:
- Small red onion
- Fresh ginger - thumb size amount, finely chopped
- 1 tbsp butter / coconut oil
- 1 tbsp of garam masala - I use @bartingredients
- 1 tsp sweet smoked paprika
- 1/2 tsp cinnamon
- 4 chopped carrots
- 1 tbsp of creamed coconut or half a tin of coconut milk
- 1 tin of chopped tomatoes
- 1 tin of chickpeas - drained
- salt and pepper
How to make it:
Melt the butter / oil in a pan, add the chopped onion and ginger - mix together and let it cook until the onion starts to brown. Add spices - cinnamon, garam masala and paprika. Mix. Cook for 1 minute. Add tin of tomatoes and a splash of water. Add chickpeas, carrot and coconut cream. Cook for 15 mins, occasionally stirring until reduced.
And serve. Simple as that. Enjoy 😊
You can also batch cook - freeze portions or quickly warm it up the next day.
